Jessica’s Column with health and cooking tips
Quick, simple dishes are the order of the day as most of us would rather be out enjoying this wonderful summer than getting hot and bothered in the kitchen. Picnics are also high on the agenda and our tasty fritters are just as delicious eaten cold in the great outdoors! Add the salad and perhaps any leftover coleslaw or potato salad from the burger and fish recipes and you have a spread fit to grace the classiest of hampers.
We have been very busy through June and July with various summer events but when these quietened down I took the opportunity for a much needed break in Croatia. It is a beautiful and historically interesting country with friendly locals and great locally sourced food. I enjoyed some delightful meals, eating locally caught fish and freshly picked vegetables. You could go down to the quay and choose the fish yourself as the fishing boats unloaded their catch of the day, and then it was a stroll along to the stall where the locals bring their fruit and veg to sell.
I love this close connection with one’s food, knowing it is as fresh as it possibly can be. It doesn’t just feed the body but nourishes the soul too. We are pleased to say that our suppliers for the recipe bags share this ethos and although you won’t find us waiting on the quay for the fishing boat to come in, our fish supplier provides the next best thing. The fish we use is landed in areas around the south east coasts to avoid excess food miles and is delivered to you within a very short time frame.
A great family dish this week is the hotpot. If you have hungry teenagers in the house as I do, this healthy dish can be made and put in the fridge for them to reheat as and when they need to eat!
Remember to check the use-by dates on the meat and fish and freeze if necessary. Also familiarise yourself with the recipe and get all the ingredients out before you start to cook. Have fun cooking!
